Easy chicken casserole

I love tasty yet easy to do cooking.....this chicken casserole fits the bill perfectly!! It's quick to throw together and can then just happily sit on the hob for an hour cooking away.

  • 4 x chicken thighs
  • 1 onion
  • 3 cloves garlic
  • handful mushrooms
  • 1 courgette
  • 1 tin butterbeans
  • mixed herbs
  • low salt chicken stock (500ml)

1. Onion and garlic into my mini chopper & whizzed up.
2. Bit of oil in a large pan, add the onion & garlic plus the chicken. Brown the chicken for a few minutes.
3. Add the mushrooms, courgette and herbs and continue to saute for a few more minutes.
4. Pour in the stock, add the butter beans.
5. Cook on a low heat for about an hour or until the chicken is thoroughly cooked and falling off the bone.
6. Enjoy - with rice, crusty bread, potatoes....anything really :-)
